It dawned on me not too long ago, that not everyone can take a few steps out their back door and have immediate access to plentiful smoking hardwoods. For years I’ve taken for granted my ability to walk 50 or 60 yards from the house and trim up hickory, white oak, cherry and persimmon trees for my cooking needs. Not only do I have access, but over the years I’ve accumulated a great deal of wood processing equipment. For those of you who don’t have access, equipment or time to cut your own smoking woods, we’ll send you some of ours.

I carefully cut and split my stock so that it is just the right size to use in a ceramic cooker (Big Green Egg, Komodo Kamado, Primo, etc.)

The splits have a maximum edge of two inches, a minimum edge of ¾", rectangular or triangular in section and are cut to 4 inches in length. I think this is about as good as you can get for a ceramic grill, so we call our stock CG Splits.

Some folks swear that bark will ruin a cook, others know for a fact they get better results when bark is included. Whichever side of the fence you’re on in this debate doesn’t matter, ‘cause we offer it both ways.

We sell CG Splits in one third of a cubic foot units. The United States Postal Service has a Priority Mail Flat Rate Box that holds a third of a foot comfortably, and their reasonable rate for this box allows us to price CG Splits including 2 to 3 day shipping anywhere in the country, including Alaska and Hawaii! CG Splits are stacked in the box, not dumped, so you’ll find more wood in this box than in any we’ve seen from our competitors. More than twice as much in some cases!

When I’m laying up a low and slow cook, I’ll arrange five CG Splits like wagon wheel spokes in two different layers with the lump charcoal. That way, no matter how the fire spreads over the cooking time, you should always have some of the wood smoking.

In cutting these very precise little splits, I end up with a lot of odd ball chunks. If you’re looking for a bargain, we sell our Odd Balls in a half a cubic foot box. Nothing will be smaller than a dice cube or bigger than a man’s fist. Odd Balls are not available bark free, but you won’t find any chunks that are just bark, either. Since the sizes are random, they don’t pack as tight as CG Splits, but we’ll get the box as full as we can.

Presently we offer hickory, white oak, wild cherry and persimmon. Other species may be added later.
